In another month or so, I’ll be making up batches of cookies to give out to the local Fire and Police Departments… Something I like to do about twice a year to show my appreciation for all their hard work (ok a batch of cookies doesn’t quite cut it in showing full appreciation, but it’s a start — and of course I always have a smile and a wave for the guys in Public Safety).
For me, cookie making is something I’ve done off and on over the years – Starting back sometime in High School or College (maybe earlier) and it has always brought me immense pleasure to do something to show my thanks and appreciation. While it wasn’t cookies one of my first memories related to Public Safety was buying the Fire Chief or Captain (can’t recall which it was now) an ice cream cone. While I can’t go buying ice cream cones for everyone (or buying them all a cup a coffee), I can make cookies – Well, maybe not for everyone, but atleast a group…
Since staying fit and healthy is paramount, I thought I’d try to make these cookies as healthy as possible (well as healthy as a cookie can get). For starters, I’ll be using Hard White Wheat (rather than traditional White Flour). I figured I’d make an oatmeal base cookie but am having trouble deciding on the second ingredient:
- Dark Chocolate Chips (AntiOxidants in the dark chocolate)
- Peanut Butter (Peanut Butter is full of good oils and protein)
- Oatmeal Raisin (I know there’s something good for you about raisins + traditional)
